Bruschetta on Garlic Bread

Ingredients

1 loaf Italian focaccia-style bread, halved to make two large slices

1/4 cup (60 ml) softened butter

2-3 garlic cloves, finely chopped

4-5 Gen V vine tomatoes, diced

A few fresh basil leaves, chopped

1 drizzle extra virgin olive oil

2 tsp (10 ml) balsamic vinegar

Balsamic reduction (for garnish)

1/4 cup (60 ml) crumbled feta cheese

Preparation

  1. Preheat the oven to 425°F (220°C).
  2. In a small bowl, combine the softened butter and chopped garlic. Spread this mixture evenly on the slices of bread.
  3. Place the bread slices on a baking sheet and bake for 10-12 minutes, or until the bread is golden brown and slightly crispy.
  4. Meanwhile, in a separate bowl, combine the diced tomatoes, chopped basil, olive oil and balsamic vinegar. Season with salt and pepper.
  5. Once the bread is toasted, then cut into individual portions. Generously add the tomato filling to each slice.
  6. Finish by garnishing with a drizzle of balsamic reduction and the crumbled feta cheese.
