Ingredients
350 g (3/4 lb) homemade or store-bought pizza dough
30 ml (2 tbsp) homemade or store-bought basil pesto or passata (tomato coulis)
551 ml (1 dry pint / 278 g) GenV cherry tomatoes, halved
125 g (1/4 lb) buffalo mozzarella, torn into pieces
A few fresh basil leaves, to serveSalt and freshly ground pepper
To serve (optional)
A few arugula leaves
A few thin slices of prosciutto

Preparation
- Place a pizza stone in the top third of the oven and preheat the oven to its highest temperature of 260ºC to 288ºC (500 to 550°F) for 45 minutes.
- On a lightly floured work surface, roll out the pizza dough into a rectangle of about 5 mm
(1/4 inch) thick. Cut out a rectangle of parchment paper the size of the dough and place it on the back of a baking sheet (to allow the pizza to slide easily onto the pizza stone). Fold the dough in half to transfer to the parchment paper. - Spread the pesto or passata over the top of the dough. Top with cherry tomatoes and pieces of cheese. Season with salt and pepper.
- Transfer the pizza to its parchment paper on the pizza stone. Bake for 8 to 10 minutes, or until the pizza is golden brown and the tomatoes are burst.
- Let cool or cool, to taste. Serve sprinkled with fresh basil leaves and/or arugula. Add thin slices of prosciutto and/or parmesan shavings to the top of the pizza.
Cooking note: You can also bake pizza in a pizza oven.
