Crispy Peach, Prosciutto, and Mini Boursin Salad

A summer salad combining the sweetness of peaches, the saltiness of prosciutto, and the creaminess of mini Boursin cheese, all complemented by a homemade coriander and basil pesto, crunchy pumpkin seeds, and crisp Gen V lettuce.

Ingredients

2 heads of Gen V crispy lettuce

100 g (3.5 oz) prosciutto slices

3 peaches, quartered

130 g (4.6 oz) Boursin minis with herbs and garlic

A small bunch of cilantro

A small bunch of basil

15 ml (1 tbsp) honey

Juice of half a lemon

120 ml (½ cup) olive oil

60 ml (¼ cup) pumpkin seeds

Grilled bread for serving

Preparation

  1. In a blender, mix the cilantro, basil, honey, lemon juice, half of the pumpkin seeds, and olive oil. Season with salt and pepper.
  2. Arrange the lettuce leaves on a plate and top with prosciutto slices, peach quarters, pesto, Boursin minis, the remaining pumpkin seeds, and a few basil leaves. Serve with grilled bread.
