Cucumber Cocktail

A fresh and lightly sweet cocktail made with cucumber juice, lime, and mint. Perfect for a summer aperitif — with or without alcohol!

Ingredients

2 mini cucumbers, thinly sliced lengthwise

4 ounces of Gin

A few mint leaves

2 ounces of apple juice

2 tbsp or 30 ml of brown sugar

A few lime wedges

Ginger beer

Preparation

  1. Place the cucumber slices in 2 glasses to cover the sides.
  2. Make the gin mixture: In a cocktail shaker, mash the mint leaves, with 1–2 lime wedges and the brown sugar. Add a few ice cubes, gin and apple juice. Mix well.
  3. Serve: Divide the gin mixture between the glasses with the cucumbers. Fill the rest of the glasses with the ginger beer. Garnish with the lime wedges.
