Ingredients
2 cases of Gen V cherry tomatoes, halved
1 shallot, finely chopped
3 garlic cloves, minced
30 ml (2 tbsp) capers, drained
280 g spaghetti
120 ml (1/2 cup) grated Parmesan cheese
A few fresh basil leaves
Olive oil
Salt and pepper, to taste
Preparation
- In a large skillet over medium heat, heat a drizzle of olive oil. Add the shallot and garlic and cook for 1 to 2 minutes, until fragrant.
- Add the capers and continue cooking for 2 to 3 minutes. Season with salt and pepper to taste.
- Stir in the cherry tomatoes. Reduce the heat to low and cook for 10 to 15 minutes, lightly mashing the tomatoes with a wooden spoon so that they release their juices.
- Meanwhile, bring a large pot of salted water to a boil. Cook the spaghetti according to package directions. Before draining, reserve about 250 ml (1 cup) of the cooking water.
- Add the drained pasta to the pan with the tomatoes. Stir in the Parmesan cheese and basil. Add a little reserved cooking water, if needed, to make a light and creamy sauce. Toss well to coat the pasta.
- Serve immediately and garnish with a few fresh basil leaves as well as a little extra Parmesan cheese, if desired.
