Beef Chili

A hearty and comforting beef chili made with Gen V red bell pepper, ground beef, and a flavorful blend of spices. Perfect for cozy evenings, served with rice, tortillas, or topped with sour cream and fresh cilantro.

Ingredients

1 yellow onion, chopped

1 Gen V red bell pepper, diced

1 container Gen V grape tomatoes, cut into 4

1 jalapeño, seeded and chopped

400 g minced beef

10 ml (2 tsp) ground cumin

15 ml (1 tbsp) smoked paprika

10 ml (2 tsp) chipotle chili powder

1 garlic clove, minced

45 ml (2 tbsp.) tomato paste

A 398 ml can of tomato sauce 

1 x 540 mL can kidney beans, drained and rinsed

375 ml (1 1/2 cups) beef broth

2 bay leaves 

A small bunch of fresh cilantro, chopped (for garnish)

Mexican cheese blend (for garnish)

A few slices of jalapeño (for garnish)

Chopped red onion (for garnish)

A few slices of avocado (for garnish)

Sour cream or Greek yogurt (for garnish)

Corn chips, for serving

Preparation

  1. In a large saucepan, heat a drizzle of olive oil over medium-high heat. Add the ground beef and break into large chunks. Cook for 4-5 minutes until the beef is nicely browned. Remove from the pan and set aside.
  2. Add the diced onion and jalapeños. Season with salt and cook, stirring occasionally, 2 to 3 minutes, until the onion begins to soften.
  3. Add the tomato paste, minced garlic, cumin, chili powder, smoked paprika, and chipotle powder. Cook for 1-2 minutes.
  4. Add the diced red pepper and tomatoes. Cook for another 2 to 3 minutes until the vegetables are tender.
  5. Return the ground beef to the pot. Add the drained kidney beans, tomato sauce, beef broth and bay leaves. Mix well and reduce the heat.
  6. Cover the pot and simmer for 45 to 60 minutes, stirring occasionally.
  7. Serve and top with sour cream or yogurt, chopped red onion, ed avocado slices, shredded cheese, jalapeño slices, and fresh cilantro. Serve with corn chips.
