Chicken shawarma skewers

Juicy chicken skewers seasoned with fragrant shawarma spices, served alongside a fresh cucumber, cherry tomato, and radish salad, a creamy tahini-yogurt sauce, and sumac onions. Paired with crisp lettuce and warm pita bread, this dish is a flavorful and crowd-pleasing complete meal.

Ingredients

For the skewers:

3 chicken breasts, cubed

120 ml (1/2 cup) yogurt

15 ml (1 tbsp.) tomato paste

5 ml (1 tsp) smoked paprika

5 ml (1 tsp) ground cumin

5 ml (1 tsp) garlic powder

1/2 tsp (2.5 ml) chili powder

2.5 ml (1/2 tsp) ground cinnamon

A drizzle of olive oil

Salt and pepper, to taste

For the salad:

1 Gen v English cucumber, cubed

1 container Gen v cherry tomatoes, halved

4 to 5 radishes, thinly sliced

Fresh cilantro, chopped

Crumbled feta cheese

For the sauce:

120 ml (1/2 cup) yogurt

120 ml (1/2 cup) tahini

The juice of a lemon

A little water (as needed to adjust the texture)

Salt and pepper, to taste

To serve:

A few pita breads

One head of crisp Gen V lettuce, separated into leaves

1/4 red onion, minced

5 ml (1 tsp) sumac

Fresh coriander


Preparation

  1. In a bowl, combine the yogurt, tomato paste, spices and a drizzle of olive oil. Add the chicken cubes, season with salt and pepper, coat well and marinate for at least 5-10 minutes (or several hours for more flavor).
  2. Thread the chicken pieces onto skewers. Heat a drizzle of olive oil in a large skillet over medium-high heat. Cook the skewers for about 5 to 6 minutes per side, until the chicken is nicely browned and cooked through.
  3. In a bowl, combine cucumbers, cherry tomatoes, radishes, feta and cilantro. Season with salt and pepper, then drizzle with olive oil. Mix gently.
  4. In a small bowl, combine yogurt, tahini, and lemon juice. Add a little water if the sauce is too thick. Season with salt and pepper and mix well.
  5. In a bowl, combine the onions and sumac.
  6. Serve the skewers with the lettuce leaves, salad, tahini-yogurt sauce, a few cilantro leaves, sumac onions and warm pita breads.
