Sandwich Grinder with roasted peppers, tomatoes and crisp lettuce

A hearty Grinder-style sandwich packed with deli meats, melted cheeses, roasted peppers, Gen V tomatoes, and crisp lettuce. A crowd-pleasing meal ready in under an hour.

Ingredients

4 slices of bread of your choice

2 Gen V mini cucumbers, thinly sliced lengthwise

3/4 head of Gen V crispy lettuce

200g halloumi, thinly sliced

Broccoli or alfalfa sprouts

1/3 cup sour cream or plain yogurt

1 avocado

1/2 lemon, juiced

3-5 sprigs each: cilantro, parsley, and dill

3-4 green onions

2 small garlic cloves

Olive oil

Salt and pepper

Preparation

  1. In a food processor, combine the sour cream, avocado, lemon juice, herbs, garlic, a drizzle of olive oil, salt, and pepper. 
  2. Pulse until a thick sauce forms. Adjust seasoning to taste.
  3. Heat a non-stick pan over medium-high heat.
  4. Add the halloumi slices to the pan and cook for about 2 minutes on each side until golden
  5. Toast the bread to your liking.
  6. Spread the green goddess sauce on the slices of bread, then top with halloumi, cucumber slices, lettuce, and a handful of sprouts.
