Halloumi, pepper and tomato skewers with honey lime and coriander marinade

Colorful and flavorful skewers featuring grilled halloumi, Gen V red bell peppers, juicy tomatoes, and red onion, all coated in a fresh honey, lime, and cilantro marinade. Perfect for a summer BBQ or an easy stovetop meal.

Ingredients

2 x 200 g Halloumi blocks, cubed

2 Gen V red peppers, cut into chunks

2 tomatoes, quartered and halved

1 red onion, cut into chunks

120 ml (1/2 cup) olive oil

Juice of 2 limes

30 ml (2 tbsp) honey

1 garlic clove, minced

A small bunch of fresh cilantro, chopped

Preparation

  1. In a bowl, mix the olive oil, lime juice, honey, garlic and cilantro until smooth.
  2. Place halloumi, peppers, tomatoes and onion in a large bowl. Add half of the marinade and toss well to coat the ingredients. Marinate for 15 to 30 minutes (optional but recommended).
  3. Assemble the ingredients on skewers, alternating halloumi and vegetables for even cooking.

BBQ Option

  1. Preheat the barbecue to medium heat. Lightly oil the grill. 
  2. Cook the skewers for about 8 to 10 minutes total, turning regularly, until the halloumi is golden brown and the vegetables are lightly grilled.

Stove option

  1. Heat a large skillet or grill pan over medium-high heat with a drizzle of olive oil.
  2. Cook the skewers for about 2 to 3 minutes per side, until the halloumi is golden brown and the vegetables are lightly caramelized.
  3. Serve hot and drizzle with the remaining marinade just before eating.
