Ingredients
2 x 200 g Halloumi blocks, cubed
2 Gen V red peppers, cut into chunks
2 tomatoes, quartered and halved
1 red onion, cut into chunks
120 ml (1/2 cup) olive oil
Juice of 2 limes
30 ml (2 tbsp) honey
1 garlic clove, minced
A small bunch of fresh cilantro, chopped
Preparation
- In a bowl, mix the olive oil, lime juice, honey, garlic and cilantro until smooth.
- Place halloumi, peppers, tomatoes and onion in a large bowl. Add half of the marinade and toss well to coat the ingredients. Marinate for 15 to 30 minutes (optional but recommended).
- Assemble the ingredients on skewers, alternating halloumi and vegetables for even cooking.
BBQ Option
- Preheat the barbecue to medium heat. Lightly oil the grill.
- Cook the skewers for about 8 to 10 minutes total, turning regularly, until the halloumi is golden brown and the vegetables are lightly grilled.
Stove option
- Heat a large skillet or grill pan over medium-high heat with a drizzle of olive oil.
- Cook the skewers for about 2 to 3 minutes per side, until the halloumi is golden brown and the vegetables are lightly caramelized.
- Serve hot and drizzle with the remaining marinade just before eating.
