Ingredients
325 g fusilli pasta
300 g medium prawns (stemmed)
5 ml (1 tsp) smoked paprika
10 ml (2 tsp) dried oregano
2 boxes of Gen V cherry tomatoes
4 cloves of garlic
2 Gen V mini cucumbers, sliced
1/2 cups (120 ml) pitted black olives
200 g feta cheese, cubed
1/4 red onion, thinly sliced
60 ml (1/4 cup) toasted pine nuts
A few fresh basil leaves
30 ml (2 tbsp.) mayonnaise
The zest and juice of a lemon
120 ml (1/2 cup) olive oil
Salt and pepper, to taste
Preparation
- Preheat the oven to 425°F (220°C).
- Cook the pasta in a large pot of salted water according to the manufacturer's instructions. Drain, rinse with cold water and set aside.
- Place the cherry tomatoes and garlic cloves in a baking dish. Drizzle with olive oil and season with salt and pepper. Bake for 20 to 25 minutes, until the tomatoes are lightly candied. Let cool.
- In a bowl, toss the shrimp with the smoked paprika, oregano and a drizzle of olive oil. Heat a skillet over medium-high heat and cook the shrimp for 2 minutes per side, until medium pink. Remove from heat and let cool slightly.
- In a bowl, crush the roasted garlic cloves. Add the mayonnaise, lemon zest and juice, a little oregano and olive oil. Whisk to a smooth sauce. Adjust seasoning to taste.
- In a large bowl, combine the pasta, shrimp, roasted tomatoes, cucumbers, red onion, olives, feta cheese, pine nuts and basil.
- Pour in the dressing and mix well. Serve cold, garnished with a few more basil leaves.
