This ratatouille tian features roasted Gen V red peppers and Gen V vine tomatoes blended into a rich tomato and red pepper sauce with Parmesan. It’s a comforting vegetarian dish that works well as a main course or a side to share.

Ingredients

2 Gen V red peppers, cut into chunks

1 onion, cut into chunks

3 to 4 cloves garlic, coarsely chopped

1 Gen V vine tomatoes, cut into chunks

60 ml (1/4 cup) grated Parmesan cheese

2 green zucchini, sliced

2 small eggplants, sliced

2-3 Gen V vine tomatoes, sliced

100 g goat's cheese

A few fresh basil leaves

Olive oil

Preparation

  1. Preparation:
  2. Preheat oven to 425°F (220°C).
  3. In a baking dish, place the peppers, onion, a tomato and garlic cloves. Add a drizzle of olive oil, season with salt and pepper, then add a few basil leaves.
  4. Roast in the oven for 30 to 35 minutes, until the vegetables are tender and lightly coloured.
  5. Meanwhile, place the zucchini, eggplant and the rest of the tomatoes on a clean cloth or paper towel. Salt lightly and let rest for a few minutes to drain the vegetables. Gently pat dry the excess water.
  6. When the roasted vegetables are cooked, transfer them to a container and puree with a hand blender or blender. Stir in the Parmesan cheese and mix well. Adjust the seasoning if necessary.
  7. Pour the tomato and pepper sauce into a baking dish and spread evenly.
  8. Arrange the slices of tomatoes, zucchini and eggplant alternately, overlapping slightly.
  9. Drizzle with olive oil and bake for 30 to 35 minutes, until the vegetables are tender and lightly browned.
  10. Remove from the oven, garnish with crumbled goat cheese and a few fresh basil leaves.
  11. Serve hot, accompanied by fresh bread.
