Salmon tartare with cucumber

A fresh and elegant salmon tartare seasoned with sambal oelek, toasted sesame oil, and lemon juice, combined with Gen V mini cucumbers, fresh herbs, and sesame seeds. Served with crispy rice paper chips, this dish delivers the perfect balance of freshness, crunch, and Asian-inspired flavors.

Ingredients

250 g tartar quality salmon, cut into small cubes

1 Gen V mini cucumber, finely diced

2 green onions, chopped

A few coriander leaves, chopped

A few dill leaves, chopped

15 ml (1 tbsp) sambal oelek

5 ml (1 tsp) toasted sesame oil

The juice of half a lemon

10 ml (2 tsp) sesame seeds

3 rice papers, cut into triangles or pieces

Preparation

  1. In a bowl, combine the salmon, cucumbers, green onions, cilantro and dill.
  2. Add the sambal oelek, sesame oil and lemon juice. Mix gently.
  3. Season with salt and pepper to taste, then set aside in the fridge until ready to serve.
  4. In a skillet, heat a little vegetable oil over medium-high heat.
  5. When the oil is hot, place the pieces of rice paper: they will become crispy in 1 to 2 seconds.
  6. Remove them immediately and place them on paper towels.
  7. Serve the tartare on a plate. Sprinkle with sesame seeds.
  8. Serve with crispy rice paper
