Lobster BLT Sandwich

A gourmet twist on the classic BLT, featuring a generous lemon-herb lobster filling, crispy bacon, juicy Gen V Beef tomato slices, and crisp Boston lettuce, all served on buttery toasted brioche bread. An elegant sandwich that's perfect for summer.

Ingredients

4 slices of brioche bread

A few leaves of Boston Gen V lettuce

The meat of a lobster weighing about 1.5 lb (675 g), cut into pieces

4 slices bacon

1 Beef Gen V tomato, sliced

60 ml (1/4 cup) mayonnaise

1 garlic clove, finely chopped

The zest of a lemon

The juice of a lemon wedge

1 tbsp fresh chives, chopped

1 tbsp fresh dill, chopped

Butter, for toasting bread

Salt and pepper, to taste

Preparation

  1. Preheat oven to 425°F (220°C). Place the bacon slices on a parchment-lined baking sheet. Bake for 10 to 12 minutes, or until crispy. Drain on paper towels.
  2. In a bowl, combine the mayonnaise, garlic, lemon zest, lemon juice, dill and chives. Add the lobster pieces and stir gently to coat. Season with salt and pepper to taste.
  3. Melt a little butter in a frying pan and toast the slices of bread until golden brown.
  4. Assemble sandwiches by topping bread slices with lettuce leaves, lobster mixture, tomato slices and crispy bacon. Close the sandwiches and serve immediately.
