Ingredients
4 slices of brioche bread
A few leaves of Boston Gen V lettuce
The meat of a lobster weighing about 1.5 lb (675 g), cut into pieces
4 slices bacon
1 Beef Gen V tomato, sliced
60 ml (1/4 cup) mayonnaise
1 garlic clove, finely chopped
The zest of a lemon
The juice of a lemon wedge
1 tbsp fresh chives, chopped
1 tbsp fresh dill, chopped
Butter, for toasting bread
Salt and pepper, to taste
Preparation
- Preheat oven to 425°F (220°C). Place the bacon slices on a parchment-lined baking sheet. Bake for 10 to 12 minutes, or until crispy. Drain on paper towels.
- In a bowl, combine the mayonnaise, garlic, lemon zest, lemon juice, dill and chives. Add the lobster pieces and stir gently to coat. Season with salt and pepper to taste.
- Melt a little butter in a frying pan and toast the slices of bread until golden brown.
- Assemble sandwiches by topping bread slices with lettuce leaves, lobster mixture, tomato slices and crispy bacon. Close the sandwiches and serve immediately.
