Salmon Bowl with Bang Bang sauce

Preparation: 15 minutes.
Cook time: 30 minutes.
Servings: 4 servings

Ingredients

For the sauce

1 English cucumber (Gen V), cut into one-inch pieces

2 large garlic cloves, minced

1 tablespoon of toasted sesame oil

4 tablespoons of rice vinegar

3 tablespoons of soy sauce

2 tablespoons of maple syrup

1 teaspoon of chili flakes

1 tablespoon of sesame seeds

1/8 cup of fresh cilantro, chopped

2 mint leaves, chopped

For the Salmon

500 to 600 grams of salmon, skin removed and cut into large cubes

¼ cup of sweet chili sauce

1 teaspoon of sriracha sauce

1 teaspoon of maple syrup

1 teaspoon of fresh ginger, grated

A drizzle of toasted sesame oil

For the Bang Bang sauce

½ cup of mayonnaise

¼ cup of sweet chili sauce

1-2 teaspoons of sriracha, to taste

2 teaspoons of honey

For the Bowl toppings

2 cups of cooked sushi rice, seasoned to taste

1 lettuce (Gen V)

Pickled ginger (to taste)

1 carrot, peeled and julienned

2 large radishes, thinly sliced

1 handful of bean sprouts

1 red bell pepper Gen V, finely diced

Sesame seeds, to taste

Preparation

1. In an airtight container, mix all the ingredients for the pickled cucumbers. Refrigerate for at least 30 minutes.

2. In another airtight container, mix all the ingredients for the salmon. Refrigerate for at least 30 minutes.

3. While the cucumbers and salmon are marinating, cook the sushi rice according to the package instructions. Season to taste.

4. Mix the ingredients for the Bang Bang sauce and set aside.

5. Cut and prepare your bowl toppings.

6. Cook the salmon cubes in an air fryer at 400°F (200°C) for 7-8 minutes or until desired doneness, ensuring the salmon is placed in a single layer.

7. Assemble your bowl by placing the rice and lettuce leaves at the bottom.

8. Add your toppings according to your preference.

9. Add the pickled cucumbers, pouring a little of the marinade over the rice and toppings.

10. Once the salmon is cooked, place it over the toppings.

11. Drizzle some Bang Bang sauce on top.
